Pumpkin Seed Brittle

I am very excited to share with you my way of making pumpkin seed brittle. This kind of came together by my mistake of making a bit too much caramel to candy the seeds. My original plan, being to just slightly coat the seeds. It ended up being better than the original intention.

This recipe has 2 steps. The first is to cook the seeds and the second is to cook the caramel. At the end, you add the seeds to the caramel and pour over parchment to set.

BE CAREFUL. Caramel is very hot and will burn you and stick to your skin like napalm. Its dangerous. You must take caution.



2 pans ( I used one nonstick and one cast iron)
1 rubber spatula
Parchment paper
Sheet tray

1 1/2 cups fresh pumpkin seeds
1 t ground ginger
1 t ground cinnamon
1 t ground nutmeg
1 t curry powder
1 T salt
1 stick of butter
1 cup of brown sugar
