Coconut Almond Energy Bar

When schedules are busy and don’t parallel its nice to have something on hand, ready to go, that has nutritional value and won’t leave you hungry when preparing to face the day.  They freeze well and taste great! This recipe is vegan without the added chocolate ganache

 

THE TOOLS:
1 Large Mixing bowl
I Rubber spatula
1 Food processor
Parchment paper
Sheet tray or pan

THE RECIPE
10 Raw dates
3 Cups rolled oats
2 Cups peanut butter
1 Cup chopped whole almonds
4 T Honey
1 Cup Dark chocolate chips
6 T Brown rice syrup
1 Cup shredded coconut
4 T Ground Flax seed or flaxseed meal
1 T coconut oil
